In the short time I’ve been blogging (just over 15 months!), I’ve seriously made some stellar friends online. Kate Toholka from Summersalt Life is one of them. Oh my, she is a massive sweetie. Kate is a K9-loving ocean baby with an insatiable passion for holistic health and wellness. So you can probably see why I dig her vibe so much.

When she’s not hanging by the surf with her pup, Kate is an empowering wellness speaker, a health and life coach and an occupational therapist. Oh, and she’s an Amazon #1 Best Selling Author! You know, she writes a bit in her spare time…

Awesome, right?!

Get comfy dear reader, pour a cuppa and settle in with Kate – one of the most inspiring holistic health cats going around…

+ Tell us, what makes up your lifeblood?

I’m a total psych-nerd. I love everything about the mind and human behaviour, the WHY behind the things we do. It completely fascinates me how we know so much, yet we tend to act against our own knowledge. I’m forever curious about the relationship between our thoughts, emotions and body, and forever searching for the answer to the question; “why do we do that when we know we shouldn’t?”.

I love to not only explore and learn more about this, but to use what I do know to help women beat down their barriers (it’s always rooted in the mind) to give way to a crazy, wild, rich and meaningful life that they so deserve. It really gets my life blood pumping – I get what I like to call my ‘coaching high’ every time I see a client. I love it, I just love helping women unlock their true potential.

+ Eleanor Roosevelt said, ‘The future belongs to those who believe in the beauty of their dreams.’ What’s your beautiful dream?

I have a beautiful dream of being able to do a handstand on a stand up paddle board, off a Hawaiian beach, with a floating bar nearby with my spunky man preparing me a Pina Colada.

Ok, that is definitely one beautiful dream of mine but probably not what you mean when you asked me that question!

No, my real heart-driven beautiful dream is to be a philanthropic Mumpreneur. I absolutely LOVE working for myself, I would love to be a mum and I love to give. My beautiful dream is simply working every single day as a stay-at-home psych nerd mum, giving my gift directly to my clients and indirectly through philanthropic means.

Oh, and I have this dream that being natural, healthy and sustainable is as cool as Beyonce. It’ll happen.

+ What benefits has prioritising a healthy lifestyle had on your life?

Gosh, where do I start?! First and foremost, it allowed me to find my purpose. Healthy body + healthy mind = healthy life, and all that shiz – totally true. It all works in perfect harmony.

Allowing myself to be healthy, and I mean healthy in the mind, body and soul, has helped me reconnect to what is really important to me. Not what is expected of me – but what really makes my heart sing. Secondly, it has helped me to actually enjoy life. I’m now well enough to be fully present in each moment. To really see and feel the goodness of what’s going on. It’s unreal.

+ Exploring, breaking the routine, bending the rules… How do you ensure you maintain an element of playfulness and adventure?

I’m consciously working on this one but having a pup definitely helps to break the routine and invites play into my life.

I have set an intention this year to purchase a SUP board and a skateboard. They are both totally outside of my comfort zone but they are the playfulness push I need to get out and about! I’m going to start learning on my boyfriend’s long board, if he’ll let me…

+ What’s the best advice you’ve been given – and who gave it to you?

I really struggled with this question. Nothing immediately comes to my mind but after some thought (ok, about 20 minutes of thought) I realised that my dad would have given me the best advice. Plenty of times. And what was it? Silence.

Seriously. He has this uncanny ability to hold his tongue and not say anything, when he knows I’m about to do something not so great or when he knows a better way. So, I’ll go on ahead and make my mistake, and he won’t say ‘I told you so’. Instead, he’ll explain to me why it was a mistake and how it was important to experience it first hand to really know and learn from it.

And it’s kinda ironic, because he’s really good at dishing out advice all the time. He just seems to know when it’s best to let me learn firsthand. And there is no better advice than through making your own mistakes.

What’s your favourite…

1. Travel destination: Hawaii. Take me there. Now.

2. TED talk: Kelly McConigal’s talk about stress. Fascinating.

3. Blog: Changes all the time. Currently loving Marie Forleo.

4. Breakfast: GF toast, mashed avocado with lime and chili, free range bacon, and a poached egg. [ Claire says “ummmm… drool!!” ]

5. Quote: “Feel the fear, do it anyway.”

+ What role does creativity play in your life and how do you honour it?

I never realised I was a creative person until I started my own business. I just do it via ‘unconventional’ means. I don’t paint, draw, dance, make music, or sing. I write. I create programs. I turn hard facts into fun packs!

It may sound very boring but in fact, I find it incredibly creative. The whole process of transforming what could potentially be really boring information (never for me!) into something beautiful, user-friendly, practical is so energising for me. So whenever I feel stuck and uninspired, I know it’s because I’m spending all my time doing the reactive things, instead of creating something new and exciting.

+ How has having a blog changed things for you?

It has opened up so many doors that I didn’t even know that were there! The awesome people that have come into my life (like you!)have been phenomenal. It’s allowed me to meet people who have same interests in me and share similar goals, which has invited deep, meaningful and intellectual conversations that I just wasn’t getting beforehand.

It has also been a great creative outlet – I’ve always fancied writing but never really did any. Starting my blog really allowed me to explore my writing further – to try different styles, topics, and really help me find my writing groove.

[ Claire says “Blushing – you too babe! And totally agree on blogging inviting in deeper conversations… Mmmm.” ]

+ What message does your one-year-from-now-self have for you?

Kate, you lovely daggy giraffe-like human, I love you. Take a deep breath will you?! You’re hard work is going to pay off and it is going to reap the rewards you are so wanting. Just take your time, pour your heart into it and embrace each moment like it’s your last. Lose your attachment to the outcome and you will glow. Believe me, you will. Now, get off the computer and go take Hersh for a walk, she’s making a heck of a mess in the garden.

+ Can you share with us your secret indulgence?

I’m a sucker for chips. Always loved them and always will. So instead of buying the frozen crap in the supermarket or getting them from takeaway, try my all time favourite sweet potato chippies!

1 sweet potato, cut into chips.

1 tablespoon coconut oil.

Pinch of Himalayan salt

1-2 tablespoons of mixed herbs (parsley, oregano, basil).

Pre-heat oven to 180c

Cut potato into chips, however you like them.

Boil them in a pot on the stove until they are just getting a soft.

Drain water from pot and toss the chips around so they get a little bit mashed. This makes them nice and crunchy when baked.

If your coconut oil hasn’t melted, put into a tray and pop into the oven to melt. This won’t take long.

Place chips into tray, with the melted coconut oil.

Add herbs and salt, toss through well.

Cook until brown, toss regularly to ensure no burning.

Serve as a side to your main meal, or as a yummy snack.
